  • 1 cup heavy cream
  • 1/2 cup toasted coconut for garnish (optional)

Instructions

  • Preheat your oven to 350°F (175°C) and prepare an 8×8-inch baking pan by greasing or lining with parchment paper.
  • In a mixing bowl, combine graham cracker crumbs, shredded coconut, granulated sugar, and melted butter; mix until resembling wet sand. Press into the prepared baking pan.
  • In another bowl, whisk together the coconut milk, powdered sugar, vanilla extract, eggs, and cornstarch until smooth. Pour over the crust.
