- 4 cups fresh broccoli florets (about 1 large head)
- 1 cup carrots, diced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups vegetable broth (or chicken broth for a non-vegetarian option)
- 2 cups shredded sharp cheddar cheese
- 1 cup heavy cream
- 2 tablespoons butter
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon nutmeg (optional)
Instructions
- Gather all your ingredients and equipment. Wash and chop the broccoli into florets, dice the carrots, and finely chop the onion. Mince the garlic, and measure out the cheese and cream.
- In a large pot, melt the butter over medium heat. Add onions and sauté until they become translucent, adding in the garlic shortly before the onions are done to prevent burning.
- Add the diced carrots and broccoli florets, stirring them in to coat with the butter. Pour in the vegetable broth and bring the mixture to a boil.
- Once boiling, reduce the heat and simmer for about 15-20 minutes, or until the broccoli is tender.
- Using an immersion blender, puree the soup to your desired consistency, or reserve some broccoli florets for a chunkier texture.
- Return the pot to low heat, stirring in the heavy cream and shredded cheddar until melted. Season with salt, pepper, and nutmeg if using.
- Ladle the warm soup into bowls, and garnish with your choice of toppings.
