Instructions

  • Preheat your oven to 350°F (175°C). Prepare a muffin tin by lining it with paper liners or greasing it lightly. Mash the ripe bananas in a medium bowl until smooth.
  • In a large mixing bowl, combine the softened cream cheese, melted butter, granulated sugar, and brown sugar. Beat until smooth. Add in the eggs and vanilla extract, mixing well. Incorporate the mashed bananas. In another bowl, whisk together the flour, baking soda, and salt, then fold into the wet ingredients.
  • Divide the batter into the muffin tins, filling each about 2/3 full. Bake for 18-20 minutes, or until a toothpick comes out clean. Cool in the pan briefly, then transfer to a wire rack and serve warm.
