  • 6 slices of day-old bread (preferably brioche or challah)
  • 2 cups of milk (whole or almond)
  • 3 large eggs
  • 1 cup of sugar
  • 1 teaspoon of vanilla extract
  • 1 teaspoon of ground cinnamon
  • 1/2 teaspoon of salt
  • 1/4 cup of unsalted butter, melted
  • 1/2 cup of chopped nuts (walnuts or pecans) – optional

Instructions

  • Preheat your oven to 350°F (175°C). Cut the day-old bread into bite-sized cubes and set aside. In a large bowl, mash the ripe bananas, then add milk, eggs, sugar, vanilla extract, ground cinnamon, and salt. Whisk until combined.
  • Fold in the bread cubes and nuts, ensuring each piece is coated with the custard mixture. Allow to sit for 10 minutes for the bread to absorb the liquid. Pour melted butter into a greased baking dish, then pour the bread mixture over it and press down gently. Bake for 45-50 minutes until golden brown and a knife comes out clean when inserted into the center.
